I'm a big fan of classic homemade chocolate chip cookies. Unfortunately, my waistline doesn't seem to love them as much as the rest of my body does...
So, what's a girl to do? I can't give them up all together! Luckily, I found a recipe ala Averie Cooks and switched it up to match my lazy domestic goddess. Here's my version of raw chocolate chip cookies using just 4 ingredient - and they are good!
2/2 cup raw cashews (unsalted)
1/3 cup raw oatmeal
3 tbs Agave
1/4 cup chocolate chips
Blend the cashews and oats in a food processor or super powered blender (I use my Vitamix)
Once the nuts and oats have a flour like consistency, mix in the Agave
Mix together until you achieve a dough-like texture
Mix in chocolate chips and roll into balls - voila! Easy peasy!
I like to place them on parchment paper and freeze them, they taste even better a little frozen.
